hashbrown potato recipe.




its not like our weekly meal rotation has ever been particularly huge or exciting, but ever since ive been gluten free (and weve been extra broke) weve been in an exceptionally boring dinner rut, with "breakfast for dinner" happening way more frequently than id like to admit.

 its not my favorite dinner (ive just never been into breakfasty foods, when i was a kid my stepdad was really into going out to breakfast, and id usually order a cheeseburger), but its easy, and its cheap. its not bad, its just not usually my favorite night of the week. ive learned something from this, though: that i really like breakfast potatoes. or hash browns. or home fries. or whatever you call them. 

heres how i make them:

hashbrown potatoes
(serves 4)

ingredients:
potatoes (either two of the freakishly large baking potatoes, or 4-5 normal sized potatoes)
1/2 an onion
a green bell pepper
3 cloves garlic
olive oil
lemon pepper (to taste)

heres what to do:

start by heating a few tablespoons of olive oil in a cast-iron skillet. next finely chop your onions and garlic and add them to the hot oil. saute on medium/high heat, stirring frequently until everything starts caramelizing. while thats going (it will take a few minutes) de-seed and chop your bell peppers, and dice your potatoes into uniform, bite sized pieces. once the onions and garlic are done, add a bit more oil, followed by the potato and pepper, and stir. sprinkle liberally with lemon pepper or whatever seasonings your little heart desires, and continue cooking everything on high heat, stirring every minute or two to keep the bottom from burning, until the potatoes are cooked through, which generally takes 15-20 minutes. 

we usually serve ours with eggs, toast, and maybe some pancakes if im feeling ambitious.
